Here is the smartest trick: do not stay in Dubrovnik itself, but in quiet Trebinje, just across the border in Bosnia. You pay significantly less for a room there. You can then visit Dubrovnik as a day trip. That saves hundreds of euros over a week.

Transport
Book buses and trains in advance. It is cheaper than buying them on the spot. For island hopping between Split, Hvar and Korčula, ferries are your only option; prices vary greatly per route.
Looking to venture beyond Croatia? The Bay of Kotor (Montenegro) is a few hours by bus from Dubrovnik. Mostar in Bosnia is equally close. Both countries are easy to reach without losing much extra travel time.

Street food and cooking for yourself is affordable. A beer or wine is relatively affordable in October.
